Flavor Profile

SPOGOS is salt, pepper, onion, garlic on steroids! Use it literally anywhere you would use salt and pepper and have your mind blown! It makes good a Texas style brisket and is very pepper forward. The hint of porcini mushrooms round everything out, allows savory umami and takes it to a whole other dimension!

What to Use it On

This rub works on anything beef, but it essentially good on everything! You can use this rub basically anywhere salt, pepper, onion and garlic would be used!

How to Apply

Use this rub anywhere where salt and pepper would be used. With anything low and slow will not require a binder, however a plain yellow mustard binder works great! When cooking over direct high heat use liquid fat such as peanut, walnut, olive, or vegetable oil as a binder, then apply rub heavy into binder, let it set up and sweat out for at least 30 minutes.
